1. Pre-grill
If you are having a get-together, it's best to grill before people arrive. This way, you can avoid undercooking because you feel pressured to serve everybody. Try grilling the burgers four hours prior to anybody's arrival. However, you should cook the meat until almost done so that you can throw it back on the grill for a quick heat-up as guests arrive.
2. Divide temperatures on the grill
The biggest mistake many grillers make is overcooking the meat. You can avoid this problem by keeping the grill hot on one side and cool on the other. You can achieve this by gathering the coals on one side. Place the meat that is done cooking on the cooler side so that it stays warm without overcooking.
3. Brine fish
If you have a problem with fish falling apart on the grill, here's an easy solution. Simply soak the fish in water and salt for about 10 minutes prior to cooking. It will hold up perfectly.
4. Apple juiceIf you want to improve the taste and tenderness, opt for apple juice instead of BBQ sauce. This method works best if you place the apple juice in a spray bottle and periodically douse the meat as it cooks.

Believe it or not, ice works really well for keeping meat moist on the grill. Simply place an ice cube in the middle of the patty as it cooks for a tasty, juicy result. If you prefer, you can also use a bit of butter instead.
